Mashed Potato Cakes

Ingredients

  • 2 cup cold mashed potatoes
  • 1 egg
  • butter

Instructions

These are often made with leftover mashed potatoes. You may also beat an egg into the potatoes - they must be cold. Mix the egg into the potatoes. Form the potatoes into flat cakes 3 to 4 inches across and 1 to 1 1/2 inches thick. Brush with butter and saute gently in butter until the cakes are nicely browned on both sides. Serve very hot. Excellent with chops or steaks.
