Refrigerator Sweet Pickle Recipe

"These refrigerator sweet pickles are easy to make, and there's no canning required. Simply chop the vegetables, make the brine, and place in the fridge for 24 hours. Since they aren't canned, they stay crisp. I like to add onions and green peppers to my sweet pickles. You can use sugar, honey, or monk fruit or your favorite sweetener since this isn't a canning recipe. These will last for several weeks in the fridge, so I recommend making just one batch of 6 jars."
