Sauteed Green Beans
Green beans are a staple in many a household and for good reason—they are widely available, affordable and incredibly nutritious! They are most definitely on heavy rotation in my house, which is why I like to switch things up to keep my kids from getting bored. In this recipe, the green beans do a great job of soaking up the warming flavors from the butter and garlic, and cooking them covered allows them to steam through and become incredibly tender without overly crisping up or burning their skin. A sure winner at any table!

Ingredients
- 2 tablespoon (30 ml) avocado or olive oil
- 1 tablespoon (15 ml) unsalted butter or nondairy butter of choice
- 14 ounce (400 g) green beans, woody ends trimmed
- Salt and black pepper, to taste
- 2 garlic cloves, minced
INSTRUCTIONS:

Heat a large nonstick frying pan over medium heat and add the avocado oil and butter. Once the oil is hot and the butter has melted, add the green beans, salt and black pepper and toss them in the pan, making sure they are evenly coated in the oil and butter. Cover with a lid, turn the heat down to medium-low and cook for 10 minutes, stirring halfway through.

Add the minced garlic and toss until well combined. Cover with a lid and cook for 5 minutes, or until fork tender. Serve warm.
STORAGE & REHEATING
Store in an airtight container in the refrigerator for up to 3 days. To reheat, place the green beans in a baking dish, cover and pop them in the oven at 350°F (180°C, gas mark 4, fan 160°C) for around 7 to 8 minutes, or until heated through. Alternatively, you can reheat them in the microwave (covered) on the high setting for 30-second intervals until heated through.
