Scandinavian Oven Roasted Potatoes

Ingredients

  • Preheat oven to 450 degrees. Peel 4 medium baking potatoes. Cut
  • in half lengthwise, then slice each half in thirds to form wedges.
  • Blanch the wedges by cooking 3 minutes in unsalted boiling water.
  • Drain and pat dry with paper towels.

Instructions

To serve 4 to 6:. With a pastry brush, butter a baking dish large enough to hold the potatoes side by side in a single layer. (Or spray a pan with cooking spray) Place potatoes in pan. Dribble about 1/4 C melted butter over them. Sprinkle with salt (the Danes also sprinkly with paprika). Roast in oven for 15 minutes, turn and continue roasting for an additional 15 minutes.
