Spinach Cuisine

Ingredients

  • 1 lb. fresh spinach or Swiss Chard, washed well, stemmed
  • 1 tablespoon margarine
  • 1/2 teaspoon olive oil
  • 1 teaspoon Balsamic vinegar
  • 1 egg, mixed
  • 1/2 teaspoon salt
  • nutmeg
  • parmesan cheese

Instructions

Steam spinach. Chop up into about 1" pieces. Melt margarine and add oil. Add spinach and vinegar mixing well. Mix in egg and salt and continue stirring until egg is done. Sprinkle nutmeg and parmesan cheese. Makes 3 servings.
