Super Sweet Potato Casserole

Made with honey and brown sugar this Super Sweet Potato Casserole is perfect for people with a sweet tooth. Serve this tasty casserole recipe as a dessert or as an appetizer. It will fit any part of your dinner party.

Ingredients

  • 6 sweet potatoes
  • 20 ounce crushed unsweetened pineapple
  • 2 tablespoon oil
  • 2 tablespoon honey
  • 1/3 cup pecans

Instructions

  1. Preheat oven to 350 degreees F.
     
  2. Wrap sweet potatoes in foil and cook in oven for an hour or until tender.
     
  3. Unpeel the potatoes and cube them into 1 inch pieces. Put aside in bowl.
     
  4. Add  crushed unsweetened pineapple packed in juice, 2 tablespoons oil, 2 tablespoons honey to the potatoes and beat with electric mixer until well blended and fluffy.
     
  5. Move to an oiled casserole or 9" X 13" baking dish.
     
  6. Scatter pecans on top.  Bake at 350 degreees F for about 45 minutes or until casserole is bubbling and browning at edges.
