Zucchini Italiano
Here is one of the simplest zucchini side dish recipes out there. Combined with tomatoes, onions, basil and oregano, Zucchini Italiano makes an excellent side kick to any main dish!
Ingredients
- 5 zucchinis, sliced thin
- 1 can diced tomatoes
- 2 onions, peeled and diced
- 2 tablespoons basil
- 1 tablespoon dried oregano
- 1 clove of garlic, peeled and minced
- 1/4 cup lemon juice
- salt, to taste
- pepper, to taste
Instructions
- Place zucchini in a medium saucepan and add in the onions, tomatoes and other ingredients. Stir.
- Set stove to low heat.
- Let the pan simmer over the stove until the vegetables are tender and the onions are translucent.
- Remove from stove and serve as a delicious side dish.

We make something similar, but we put in Italian sausage (Mild or Spicy, your choice).

I haven't made this yet but it sounds like it would make a great vegetarian sauce for pasta. I am going to try it with eggplant. Since I have never cooked an eggplant, any suggestions as to how to handle it?

Hi fudgecake 5614000 - All of our recipes are user-submitted so unfortunately we don't have an exact time on how long it takes to cook the vegetables. We'd recommend keeping an eye on them and taking them off the stove once the onions are translucent. Hope this helps! -The editors of RecipeLion

This isn't a recipe, it's a list of ingredients. Do you stir the ingredients?? How long does it take "until the onions are translucent"?
