- 1 cup grated zucchini
- 1/2 cup shredded carrots
- 1 large egg
- 1 shallot, minced
- 1/4 cup grated cheddar cheese
- 1/3 cup Panko
- 1/4 teaspoon kosher salt and black pepper to taste

Preheat the oven to 400°F. Spray a baking sheet with cooking spray.

Grate the zucchini and carrots.

In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

Using an ice cream scoop or tablespoon, place one scoop into your hands and pack the mixture together, forming a ball.

Place on the cookie sheet and bake for 15 minutes, flipping over halfway through cooking, until golden brown and cooked through.
