Asparagus Soup
Ingredients
- 1 pound fresh asparagus cleaned and cut into 1" pieces
- 1 qt veggie broth
- 2 tbs flour
- 1 tsp sea salt
- 1 organic lemon peel and juice
- 1/2 cup sour cream
- 3 tbs sweet cream
- 1 tbs finely chopped lemon mint
- 1 tbs finely chopped chives
Instructions
Cook asparagus pieces tender in veggie broth, about 10 minutes. Mix flour with some water and then stir slowly into the simmering soup to thicken. Let simmer 1-2 minutes. Add creams, season to taste with herbs and spices of your liking. Serve hot and top with fresh chopped herbs. I think you can substitute the cream with soy or rice milk.
