Broiled Zucchini Parmesan

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup minced onion
  • 1 clove garlic, minced
  • 1 cup grated or thinly sliced zucchini
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 3-4 tomato slices
  • 2 slices multigrain bread
  • 1 tablespoon grated Parmesan cheese
  • pepper

Instructions

Heat the oil in a nonstick skillet over medium heat. Saute the onion and garlic until the onion is soft, about 3 minutes. Add the zucchini, basil, and oregano and continue cooking until it softens, about 3 minutes. Layer half of the vegetables and tomato slices on each slice of bread. Lightly sprinkle with Parmesan cheese. Broil for 1 minute or until the cheese melts. Pepper to taste.
