Black Bean Taco Salad
Ingredients
- 2 15-oz cans black beans, rinsed and drained
- 2 1/2 ounces can sliced ripe olives, drained
- 2 medium tomatoes, seeded and chopped (1 1/2 cups)
- 1/3 c shredded Cheddar cheese
- 1/4 c chopped green onions (approx. 3)
- 1/4 c chopped fresh cilantro (optional)
- 2 T lime juice
- 1 t ground cumin
- 1/4 t freshly ground pepper
- 4 c chopped spinach or other greens
Instructions
Mix beans, olives, tomatoes, cheese, onions cilantro. Mix lime juice, cumin and pepper; toss with bean mixture. Serve on spinach (greens). 4-8 servings. Note: It makes lots and keeps in the refrigerator and is a nice travel meal. Serve it with pita bread cut into small pieces and fruit.
