Ingredients
- 1/2 cup barley
- 1 1/2 pound fresh green beans
- 2 pounds (or so) white or red skinned potatoes
- 2 medium sized onions
- 2 cups water or vegetable broth
- 1 teaspoon dill weed
- salt and pepper (to taste)
Instructions
- Precook barley in 2 cups water for about 20 - 30 minutes.
- Clean and trim green beans and cube potatoes. Chop onions.
- Place barley and vegetables in large pot or casserole dish with about 2 cups water or veggie broth, salt and pepper to taste, add dill weed.
- Simmer or microwave vegetables until tender.
