Funny Face Cupcakes
Finally, a recipe that uses a cocoa alternative! This recipe uses carob powder (ground seeds and pods of the carob tree) as a substitute to chocolate. An added bonus to this cupcake recipe is that it is caffeine free!

Ingredients
- 1 1/4 cup unbleached or whole wheat pastry flour
- 3/4 cup cocoa or carob powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup softened butter or applesauce
- 3 eggs or egg replacer
- 2/3 cup soya or rice milk
- 1 teaspoon vanilla
- assorted candies
- 1/3 cup butter
- 1/3 cup cocoa or carob powder
- 1/2 teaspoon vanilla
- 3 cup sifted icing sugar
- 3 tablespoon soya or rice milk
Instructions
- Preheat oven to 350 degrees F.
- Set 22 large paper baking cups in muffin tins.
- Sift together flour, cocoa, baking powder, and salt.
- Cream butter; gradually add sugar.
- Add eggs one at a time, beating well after each addition.
- Add sifted dry ingredients to creamed mixture alternately with milk and vanilla, combining lightly after each addition.
- Divide batter evenly among baking cups.
- Bake in preheated oven at 350 degrees F for 20-25 minutes. Cool and frost.
Frosting
- Melt butter in a saucepan. Remove from heat.
- Stir in cocoa and vanilla.
- Alternately blend in sifted icing sugar and milk until frosting is smooth and of spreading consistency.
- Use candies to make funny faces.
