Herb Mashed Potatoes
Garlic, chives, and red potatoes. You can't go wrong with this recipe. Herb Mashed Potatoes will smell spectacular and taste just as good. Add this to your potato recipes.

Ingredients
- 6 small/medium red potatoes, quartered
- 2 tablespoons chives
- 4 cloves of garlic, peeled (more or less, according to taste)
- soy or rice milk (to taste)
- non-dairy butter substitute (to taste)
- Salt and pepper (to taste)
Instructions
- Boil the potatoes and garlic together in the same pot until the potatoes are very tender. Drain water. Mash potatoes and garlic together.
- Add milk and butter to taste, and stir the potatoes briskly until they are fluffy. Douse with chives, salt (or garlic salt) and freshly ground black pepper to taste.
- Variation: This also works well with minced red onion added in.
