Italian Passatelli
"Did you know that there is a pasta variety in Italy, which is prepared with breadcrumbs instead of flour? They are called Passatelli and it's a specialty from a region in northern Italy. The Passatelli mass is made with breadcrumbs, lemon zest, parmesan, nutmeg, a tiny quantity of flour, and an egg. The mass is then pressed through a potato ricer into the cooking clear broth. It's a super simple delicious dish and makes for a nice change from the usual common noodle soups out there. I love to serve it up with a green salad and a vinaigrette dressing. "
