Lemon Pie

Ingredients

  • 2 tablespoon agar flakes
  • 2/3 cup soymilk
  • 1/2 cup raw sugar or other sweetener
  • 1/2 teaspoon salt
  • 2 teaspoon grated lemon rind
  • 4 tablespoon lemon juice
  • 2 teaspoon vanilla extract
  • 1 pound tofu
  • 1 (9-inch) prebaked crumb crust

Instructions

LEMON GLAZE 1/3 cup raw sugar or other sweetener 1 1/2 tablespoons cornstarch or arrowroot 1 1/2 tablespoons lemon juice 1/2 teaspoon grated lemon rind 1/3 cup water Combine agar and soymilk and let stand for 5 minutes. Add sugar and salt, and simmer over low heat, stirring often, for 5 minutes. Pour into blender, add remaining filling ingredients, and blend till smooth. Spread evenly in crust and chill for 30 minutes. Combine all ingredients for glaze in a small saucepan and whisk until smooth. Heat, stirring constantly, until mixture thickens. Allow to cool, slightly, then spread over cheesecake. Chill an additional 2 hours.
