Lentil Loaf

Ingredients

  • 1 medium onion
  • 2-3 cloves garlic, crushed
  • 2 stalks of celery
  • 2 teaspoon sage
  • 3 cup cooked lentils
  • 3 cup cooked wild rice
  • 1/2 cup chopped walnuts
  • 1/4 cup whole wheat breadcrumbs
  • 2 Tbsp. vinegar
  • 2 egg equivalents
  • 2 Tbsp. whole wheat flour
  • freshly ground pepper
  • sea salt

Instructions

Preheat oven to 350 degrees. Finely chop celery and onion. Spray frying pan with non-stick spray (or oil/butter if preferred) Saute onion, garlic, and celery till soft, add sage. Combine all ingredients in large bowl and mix well. Spray a loaf pan (or butter it) with non-stick spray and fill with the mixture. Press down as you would with beef. Bake 30 minutes covered. Then, 10 minutes uncovered. Let stand for 5 - 10 minutes before cutting and serving.
