Orange honey Quinoa Salad

Ingredients

  • 1-1/4 cups quinoa 300 mL
  • 1 orange
  • 3 Tbsp. olive oil 50 mL
  • 2 Tbsp. cider vinegar 25 mL
  • 2 teaspoon liquid honey 10 mL
  • salt and pepper
  • half English cucumber, diced
  • 2 Tbsp. chopped fresh mint

Instructions

Maakes 4 servings.. In saucepan, bring 1-3/4 cups (425 mL) water to boil. Rinse Quinoa under cold running water; drain and stir into pan. Reduce heat, cover and simmer for 15 minutes or until tender and liquid is absorbed. Fluff with fork; transfer to large bowl. Let cool completely. Finely grate enough of the orange to make 1 tsp. (5 mL); place in small bowl. Whisk in oil, vinegar, honey, salt and pepper. Peel orange and cut into bite-sized pieces; add to quinoa. Add cucumber and mint. Pour dressing over top, toss to coat. (Salad can be covered and refrigerated for up to 24 hours.)
