Refried Red Lentils

Ingredients

  • 1 cup red lentils, picked over
  • 3 cup water
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 cup chopped onion
  • 1/4 cup olive oil
  • 1 large garlic clove, minced
  • 2 teaspoon fresh lime juice
  • 2 tablespoon finely chopped
  • fresh coriander toasted pita triangles or tortilla chips if desired

Instructions

In a large bowl wash lentils in several changes cold water until water runs clear and drain in a sieve. In a saucepan combine lentils, water, cumin, chili powder, and salt and boil lentils, whisking frequently, until smooth, about 35 minutes. While lentils are boiling, in a large skillet cook onion in oil over moderate heat, stirring, until it begins to turn golden. Add garlic and cook mixture, stirring, 5 minutes. Add lentil puree, lime juice, coriander, and salt and pepper to taste and combine well. Serve as a dip with pita triangles or as a side dish with meat, poultry, or fish. Makes about 2 cups.
