Soybean Sandwich Spread
Ingredients
- 1 1/2 c cooked, mashed soybeans
- 1/2 c sunflower seeds
- 1/2 c pureed tomatoes or tomato sauce
- 1/2 medium onion, finely chopped
- 1 1/2 T pickle relish
- 2 T ketchup
- 1/2 c wheat germ
- 1 t salt
- 1/8 t pepper
- 1/4 t thyme
- 1/4 c finely chopped celery (optional)
Instructions
Makes 3 cups. Combine all ingredients in large mixing bowl. Mix well. Will keep in refrigerator several days. When ready to make sandwiches, add a little mayonnaise to desired consistency and spread a thick layer on whole wheat bread.
