    Spicy Black Bean Burgers

    Ingredients

    • 2 cans (15 oz.) black beans, rinsed & drained
    • 1/2 cup chopped onion
    • 1/2 cup finely chopped parsley
    • 4 Garlic cloves, minced
    • 1 to 2 jalapeno peppers, seeded, minced
    • 1/3 cup + 6 tsb. flour, divided
    • 1 1/2 teaspoon ground coriander
    • 1 1/2 teaspoon cumin
    • 1/2 teaspoon cayenne pepper
    • 1 egg white, beaten
    • 1/4 to 1/3 cup bread crumbs

    Instructions

    1. Combine beans, onion, parsley, garlic, jalapeno peppers, 1/3 cup flour, coriander, cumin & cayenne; mix in egg white.
       
    2. Coarsely mash into a thick chunky paste or process in food processor, using pulse.
       
    3. Mix in bread crumbs, if necessary, for make firm mixture.
       
    4. Refrigerate 1 to 2 hours for flavors to blend. Form into 6 patties, lightly coating with flour.
       
    5. Cook in sprayed skillet over medium heat 5 to 7 minutes on each side.

    I love Black Bean Burgers. Since I have trouble with my stomach I prefer to leave theJalpeno peppers out.
