I can't begin to tell you how much my family and friends enjoyed these Grilled BBQ Chicken Potato Skins. I used the authors tip and prepared everything the night before and kept them in airtight containers until ready to assemble and cook. I also love the Nacho Grilling Platter, what a great vessel for cooking and serving. I also was unsure about the pineapple, but it gave it just enough of a sweet tropical flavor. I think pineapple and chicken are a perfect match. My point? This is a great recipe for your next bar-b-que. It will definitely deliver all the rich bar-b-que flavors, and compliment whatever it is your are serving as your main course.

My husband grills almost year round, and he love baked potatoes, and potato skins, so we will definitely try these. I'm not sure how we'll feel about pineapple in the recipe, though. Maybe I'll try a variation like traditional potato skins with cheddar and bacon.
