This sounds like a mini-burrito, and looks absolutely yummy. I hadn't thought about using an eggroll wrapper in place of the tortilla and I want to give this a try. Has anyone tried actually using a deep fryer for these, rather than baking them? The baked version looks delicious and I could see trying this with some ground beef as well. I can't wait to give these a shot.

look good but i think they should have been cooked in a wok or cast iron skillet......
