This dinner turned into what I have now deemed an American Chop Suey – a cross between an Italian meat sauce (thanks to the ground beef, onion, garlic, and tomatoes); an Asian stir-fry (thanks to the mushrooms, celery, and water chestnuts); and an American chili (see the beans, beef, onion, and tomato). The blend of cultures and cuisines in one skillet is a true reflection of the cultures and cuisines that make up our country. Hence the name… American Chop Suey!"

I love Asian cooking. I especially like chop suey because I love rice. This is a nice variation of conventional chop suey by using the ground beef. Ground beef is very popular in my family so I am going to try this recipe for something different. I am sure they will like it.

One-pot meals are always a winner with me. So much less cleaning up afterwards. I also love recipes that incorporate lots of vegetables to make sure my family gets plenty of nutrients. Its also good to know it freezes well as you could make up a batch and keep it on hand for those nights when youre just too tired to cook, or when unexpected guests drop in.
