Loaded Baked Potato Casserole
Everything you love about a loaded baked potato, in a casserole! With a spoonful of sour cream on the side, this dish is sure to please.

Ingredients
- 6 large potatoes
- 1/2 cup butter
- 1 cup cheddar cheese, grated
- 1/4 cup bacon bits
- salt to taste
- pepper to taste
- 2 cups frozen chopped broccoli, thawed
- 6 green onion tops, chopped
Instructions
- Preheat oven to 325F.
- Boil, bake, or microwave the potatoes.
- Cut potatoes in half and arrange in a large casserole dish, leaving skins on potatoes. Press down with a fork.
- Spread butter over potatoes.
- Spread bacon bits over butter.
- Add salt and pepper.
- Boil or steam broccoli. Add to top of casserole.
- Spread grated cheese over top.
- Bake until hot and cheese is melted.
- Garnish with chopped green onion tops.

Potatoes are always popular at the dinner table, and make a delicious side dish that everyone enjoys eating. Instead of the standard mashed potatoes and baked potatoes, why not prepare something different to satisfy the taste buds? Loaded baked potato casserole sounds good. When making this recipe, I would peel the potatoes, and use reduced fat shredded cheddar cheese. Meatloaf would be a great main dish to serve with this casserole.

I have been making this casserole for years. You can put anything in it that you would put on a baked potato. A little chives and parsley give it a nice color. This is a no fail recipe. Everyone likes it. Young and old.

This is great for a pot luck dinner....everyone loved it warm or cold... also add to side sour cream and salsa...
