I really do love a good rice and beans recipe. I like that this one is so affordable! If you have never added dry onion soup mix to your beans, you really should. It gives a nice richness and zip to the beans. If you are looking to bulk up the recipe with some meat, my family really likes chopped up hotdogs in with the beans (I know, not healthy...but delicious!) This is also great served along side meat loaf for a quick and cheap weeknight meal. I really recommend this recipe.
