If you are making a chocolate cake that calls for greasing and flouring the pan(s), don't use flour. Use cocoa and you won't have that white film on your cake.

I love this site!! It is such a wealth of information. One of my sure fire baking tips is to cut the amount of butter or oil a cake recipe calls for and replace it with applesauce. It adds sweetness and cuts the fats/ cholesterol. Thanks for all the GREAT recipes and keep up the good work!!

If you are greasing and flouring a pan for a chocolate cake, don't use flour---use cocoa. You won't have that white film on your cake!

My comment would be, "Don't be afraid to try new things." If you can read, you can do it! Trust yourself. Start with something that has ingredients you have in your cupboard. Don't go out and buy expensive spices, etc., until you get comfortable. But be adventurous. You'll surprise yourself. :-)

To make any boxed cake taste more like home made, replace water with milk, oil with butter and add an extra egg (or two). Add a teaspoon of vanilla to mix as well. For a moister box cake mix, add 1 small pkg of instant pudding (any flavor).

For a moist cake the best tip I can give is put 1 tablespoon of miracle whip in place of 1 egg. 2 eggs would be 2 Tablespoons of miracle whip, 3 eggs 3 tablespoons of miracle whip. this makes a cake more moist.

If you need a quick drizzle frosting warm up canned frosting for a few seconds in the microwave, then drizzle with a spoon onto the cake!

The best commernt I have is to have at least two copies of your favorite receipies in different locations not on the same property we had a fire last fall and I lost all my receipies for when I was in 7th grade to the present. Some from my Great Great Grandmother. So I' m rebuilding my file again. At least my Mother and Sister have some of the receipes, along with my Son's with their favorates. Mary Ellen Riggs

Once your cake layers have cooled completely, wrap them tightly with plastic wrap and refrigerate them overnight. This makes them much easier to frost and decorate!

I usually add cinnamon and coffee to chocolate cakes. You can't tell they're there, but it intensifies the chocolate flavor.
