Almost A Meal Casserole
This aptly-named casserole really is almost a meal in itself. Just throw together a tossed salad - or get a bag o' salad - and you're all set. Easy peasy!
Notes
Very good for preparing ahead of time. To reheat, place foil loosely over top and reheat in oven for about 20 minutes.

Ingredients
- 1 pound ground beef, browned and drained
- 1 medium onion, minced
- 1 16-ounce can diced tomatoes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 2 potatoes, sliced
- 1/3 cup flour
- 10 ounces frozen corn
- 1 bell pepper, seeded and cut into strips
- 1 1/2 cup cheddar cheese, shredded
Instructions
- Preheat oven to 375F degrees.
- In a bowl, combine browned and drained beef, onion, tomatoes with liquid, Worcestershire sauce and salt.
- Spoon into a greased 3-quart casserole.
- Layer the potatoes, flour, corn and green peppers on top.
- Cover and bake at 375F degrees for 45 minutes.
- Sprinkle with the cheese and continue baking, uncovered, for 30 minutes longer.

I made this and I dipped both sides of the potao's in the flour, and layered them . I also think you could use frozen pea's in place of the frozen corn. My hubby suggested add 1/2 tsp hot sauce to the hamburger mixture for just a bit more kick. this was a really fast, easy, and cheap casserole to make. add a salad and dessert, and it's all done!

We LOVED this dish but I still don't understand the cooking time! You stated 45 min cooking time at the beginning and then you add 30min more at the end. Am I missing something?

I cannot believe you would cook this dish 75mi. @375. I cooked it 45min. cheesed it and 5min. more. We really enjoyed the dish! Thanks

The baking time doesn't seem correct if it only takes 45.min. as stated in recipe????

You can use cornstarch in place of the flour. Use 1/2 of cornstarch, (half of 1/3 c flour) mix with cold water until dissolved to a milky white.

I made this one for my family this week and they all loved it. The dish has a fantastic flavor.Each layer was made up of something I alrdy like but put them all together and they only got better. The only concern I even had about this dish was the amount of flour to be used,I was worried that the dish would have a mushy flour messy kind of layer to it. I decided to just follow the recipe and hope for the best. I can say none of us were disappointed you couldn't even tell it was there. This will definitely become a recipe that will go into my rotation.
