    This Crazy Easy Ritz Casserole is the ultimate dish among casserole recipes to bring to a potluck, party or whatever! It's beyond easy, so few ingredients needed, like corn, creamed corn and broccoli with a layer of buttery Ritz crackers. I dare you not to fall in love with this casserole.

    Ingredients

    • 1 small bag frozen broccoli, thawed
    • 2 cups frozen corn, thawed
    • 1 can creamed corn
    • 1 sleeve Ritz crackers, crushed
    • 1 stick of butter, melted
    • salt and pepper to taste
    • garlic powder to taste

    Instructions

    1. Preheat oven to 350 degrees F. Use a 9x11 or 2 quart baking pan/dish and coat with PAM cooking spray.

    2. Mix broccoli, corn and creamed corn in dish baking dish. Add salt, pepper and garlic to taste, mix in.

    3. Mix melted butter and crushed Ritz crackers together in small bowl.

    4. Spread cracker mixture over top of casserole. Add more salt and pepper if desired.

    5. Bake in middle of the oven for 35 minutes until top is golden brown.

    I can't wait to make this dish. I think the addition of salty, buttery Ritz to vegetables will be amazing. I think I will make it as the recipe states the first time, and then try it again with chicken added the next time. I'm always looking for new side dish recipes.

    I agree that meat would be great to add to this recipe. That way, it'll be transformed from a side dish to a whole meal. Tuna or beans would be nice to add in place of meat too. Then, a fresh garden salad with a sprinkle of lemon juice would be the only item needed to turn this recipe into a complete meal idea.

    A GOOD friend or mine made this for hubby & myself one night..she had chicken breast (boneless) in there..I thought this was her recipe. So, if ya want to add some meat to this, either cooked canned white meat or cooked cubed chicken breast. VERY YUMMY!
