Ingredients
- 2 cups raw potatoes; sliced
- 1 cup celery; chopped
- 1 pound ground beef
- 1 cup raw onion; sliced
- 1 cup green pepper; minced
- 2 cups cooked tomatoes
- 1 cup Monterey Jack cheese, shredded or white cheese of choice
Instructions
- Preheat oven to 350 degrees F.
- Starting with ground beef, then vegetables, place in layers in a 2 quart casserole. Top with potatoes and spread shredded cheese over top.
- Be sure to season each layer with salt and pepper. Cover with foil and bake for 1 hour and 30 minutes, remove foil and bake remaining 30 minutes.

This is sort of like meatloaf, except all of the ingredients appear in the casserole with their own layers. Also, this recipe has sliced potatoes and a cheese topping. For a healthier version of this main dish, I would use lean ground beef or ground turkey, and reduced fat cheese.

Should the ground beef be browned first? I just can't imagine putting it in raw, then having all that grease swimming in the dish after its baked.
