Cha Cha Cha Chicken

Ingredients
- 4 skinless, boneless chicken breast halves (about 1 pound)
- 2 large onions, cut into rings
- 1 (20-ounce) can pineapple slices in juice, drained
- 1 (16-ounce) jar Pace® Picante Sauce
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons packed brown sugar
- 1 tablespoon grated fresh ginger root
- 1 tablespoon cooking sherry
- 1 teaspoon soy sauce
- 2 cups hot cooked regular long-grain white rice or jasmine rice
Instructions

Preheat the oven to 350 degrees F. Line a 3-quart shallow baking pan with aluminum foil. Layer the chicken, onions and pineapple in the pan.

Stir the picante sauce, cilantro, brown sugar, ginger root, sherry and soy sauce in a medium bowl. Pour the picante sauce mixture over the pineapple. Cover the pan.

Bake for 45 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice. Garnish with additional cilantro, if desired.

Such a delightful mix of ingredients and strong flavors that, when all combined, result in a really tasty chicken dish perfect for the whole family. Fresh ginger, soy sauce, sherry, picante sauce and delicious cilantro all add to make this a delectable meal which we had with brown and wild rice and a gorgeous fresh salad from the garden. Yummm!

This only takes 15 minutes to prepare but it sounds so delicious. I love the tropical flavors and am sure I'm going to like this dish. I really like cooked pineapple, especially with chicken. I think pineapple and chicken are a marriage made in heaven. I think the picante flavor will go nicely with that. I often sprinkle my pineapple with cayenne pepper when I eat it with chicken.

This is a great recipe to try for beginner cooks, since it all cooks in one pan, and requires very little time to prepare. Another bonus is the foil liner, which makes cleanup a cinch. The combination of spicy and sweet flavors in the sauce gives the chicken a nice zip, and also keep the meat tender and moist.
