I have a quick, easy midweek chicken meal of my own. Take chicken pieces of your choice but the skin must be on. Place in an oven proof dish or grill pan. Spread out evenly. Cover the chicken with sweet chilli sauce and chutney (peach chutney works well). Place in oven (180C/360F) and bake. Remove when the sweet chill/chutney mixture starts to caramelise. It's always a big winner in my family. I called it Sticky Chicken but the kids labelled it Sticken and it stuck.

I downloaded this recipe book. These recipes look fantastic. I'm looking forward to making Matt's Easy Chicken Divan for a midweek meal. It looks easy, peasy, simple AND delicious! I'm also going to make the Angry Bird Baked Chicken for my young son, he will eat it just because of what it is called never mind the fact that it is topped with potato chips!
