Curry Chicken and Rice

Ingredients
- 2 cups cooked chicken, diced
- 1 tablespoon olive oil
- 1 large carrot, thinly sliced
- 1/2 cup red onion, diced
- 2 cups brown rice
- 6 cups water
- 5 cubes of Chicken Bouillon
- 1 tablespoon yellow curry powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions

In a large rice cooker, add rice, water, bouillon, curry, garlic powder, onion powder, salt and pepper.

In a sauté pan, heat oil and add chicken. Cook until meat is no longer pink. Remove from pan.

Add chicken, carrots and onions to rice cooker. Stir and start rice cooker.

My cooker took about an hour to cook. Season with more salt once dish is finished cooking.

I don't have a rice cooker at home, but I really want to try to do this in my pressure cooker. If you have leftover rice, or cook the rice ahead of time, you could probably whip this dish up in a skillet in no time. I like to keep cooked chicken and cooked rice in my fridge for quick meals like this. It makes weeknights less hectic and I am less likely to grab takeout. This curry dish look delicious and very healthy too!
