Ingredients

  • 2 tablespoons cornmeal
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground cumin
  • 4 medium boned and skinned chicken breast halves
  • nonstick cooking spray

Instructions

  1. Combine cornmeal, paprika, salt, garlic, powder, pepper, and cumin in a shallow dish or on a sheet of waxed paper.
     
  2. Rinse chicken, do not pat dry; coat chicken evenly on all sides with the cornmeal mixture. Spray an unheated large skillet with cooking spray.
     
  3. Preheat skillet over medium high heat. Add chicken; cook for 8 to 10 minutes or until tender and no longer pink, turning occasionally to brown evenly on all sides.

And this picture is not correct, that is pieces of thighs and drumsticks, not boneless skinless breasts. This recipe would not create that kind of product.

Just wondering, how do you coat 4 full chicken breasts with only 2 tablespoons of cornmeal?? Is this a typo?
