I love breakfast recipes that I can make the night before. I love having a big breakfast, but I don't like coking early in the morning. I'm sure this is great on Christmas morning, but I would eat it any day of the year!

Love this. Morning with presents, family etc. No time for individual breakfasts at such a time. I have a similar one I made for breakfast during a family meal. My brother started making it for his breakfast during the week. He would freeze them in freezer bags and pop in the microwave when he came in from morning chores.

This looks so good. It sounds like a great recipe for my family to have on Christmas morning. That is the only time when we would have enough people to eat it, but I am thinking of making it and freezing in portions for one:)
