Oatmeal Peanut Butter Cookies
This is one of the best peanut butter oatmeal cookies out there. This recipe is a more health-concious alternative to plain peanut butter cookies, which can be buttery and greasy.

Ingredients
- 2 cups oats
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup peanut butter
- 3/4 cup margarine
- 1 cup brown sugar, packed
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
Instructions
1. Preheat oven to 350 degrees F.
2. Stir oats, flour, baking powder, baking soda and salt. Beat peanut butter and margarine until smooth. Add sugars, mixing well.
3. Beat in eggs and vanilla. Add oat mixture.
4. Shape into 1-inch balls; chill dough if too soft to handle.
5. Place 2 inches apart on greased cookies sheets. Flatten with floured fork in crisscross pattern.
6. Bake 8 minutes, or until brown.

I love peanut butter cookies and this oatmeal version is definitely one I want to try. Has anyone made this with either crunchy-style peanut butter or adding in some whole peanuts into the batter? I've always enjoyed peanut butter cookies with bits of peanuts incorporated into the cookie, and I think these would be great if that was done.
