Carrot Peanut Butter Cookies
As a kid, you probably refused your carrots and demanded a cookie instead; if only you knew then what you know now! Carrot-Peanut Butter cookies strike a delicious balance between taste and nutrition.

Ingredients
- 1/2 cup low fat peanut butter or Better 'N Peanut Butter
- 1/4 cup margarine
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup 100% bran cereal
- 1 cup shredded carrots
- 1/2 cup chopped peanuts or sunflower seeds
Instructions
1. Cream peanut butter, margarine, sugars, egg and vanilla until light and fluffy.
2. Mix flour, baking soda and salt; blend into creamed mixture.
3. Stir in cereal, carrots and peanuts.
4. Form into 1-inch balls; place on baking sheet, about 2 inches apart. Flatten with fork.
5. Bake at 350 degrees F for 10 to 12 minutes, or until lightly browned. Cool on racks. Store in airtight container.
