Mountain Dew Cupcakes
Coming from Bridgett at the Happy Little Tomato,try something new with your homemade cupcake recipe, and add Mountain Dew into the batter. These moist cupcakes have a wonderful citrus flavor that is perfect for the spring time. Topped with a butter cream frosting, they're simply heavenly.
Ingredients
- Cupcake Ingredients:
- 1 cup butter (2 sticks)
- 2 cups sugar
- 4 large eggs
- 3/4 cup Mountain Dew
- juice from one lemon and two limes
- zest from one lemon and two limes (separate into two piles, as you will use some for the butter cream frosting)
- 1 1/2 teaspoon lemon extract
- 2 3/4 cups flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Frosting Ingredients:
- 4 cups powdered sugar
- 2 tablespoons Mountain Dew
- juice from one half a lemon and half a lime
- remaining zest from the cupcake recipe (half a lemon and one whole lime)
- 1 teaspoon lemon extract
- neon green food coloring (or blue and green if you don't have green)
Instructions
For the Cupcakes:
- Preheat your oven to 350 degrees F.
- Beat the butter till light and fluffy for about thirty seconds.
- Add in sugar, lemon and lime zest on medium high until light and fluffy.
- Add the eggs one at a time. scraping down the sides of the bowl in between.
- In a separate bowl whisk together your flour, baking powder and salt. Slowly add in your flour mixture to the butter/sugar mixture.Turn on low for about 5 seconds.
- Add in the mountain dew, the lemon and lime juice and the lemon extract. Mix together until blended well.
- Scoop the mixture into paper lined muffin tins and then fill each until they are about 2/3rd's full. Then place the muffins in the oven and bake for about 18-20 minutes until a tester comes out clean.
- Remove them from the tins and allow to completely cool prior to frosting. Make your butter cream frosting while the cupcakes are baking.
For the Frosting:
- Beat the butter on medium high until blended and creamy.
- Add in half the sugar, turn the mixer on low for 5 seconds.
- Add the mountain dew, zests and lemon extract, beat until combined.
- Add food coloring to the desired color.
- Gradually add the remaining sugar until you have the thickness/sweetness you desire.
- Frost the cupcakes. {i keep mine in the fridge since they are butter cream frosting}. serve and enjoy!

This is the perfect desert to bring during those pot lucks in the office during the month of March for the "Green" holiday. Perhaps with a few red sprinkles it could go right into December holidays as well. I am sure those with a love of Mountain Dew will love it any time of the year.

My aunt is a fanatic about Mountain Dew. She is not much of a sweet eater but I bet she will get a kick out of these cupcakes. The next time there is a family function, I will be sure to make these just for her.
