I have always wanted a good lemon curd recipe. How long does this recipe stay good once you make it? Will it be something I need to use right away, or can I make it one day and then use it for a dessert later in the week? I like using it on pound cake and adding a whipped cream topper.

I believe in having lemon curd at home all the time. I bake a lot and I invariably end up using it. We have a huge lemon tree in our front yard so always plenty of lemons and I hate to see them go to waste. I freeze lemon juice in ice trays. I have not however, made my own lemon curd. I thought it would be too difficult. Well here is a recipe that certainly doesn't seem difficult at all. Thank you!
