I've always loved stuffed shells and this looks like something I'd really enjoy since it seems like a nice cross between Mexican and Italian dishes. Do like the recipe suggests and cook up more shells than you think you'll use since some will inevitably split during stuffing. I like the suggestions below of using salsa in place of the marinara sauce and crushed tortilla chips in place of the panko crumbs. The use of the goat cheese is new to me and I really want to try this idea.

The flavors sound so good together. Since it has a Mexican flair, I think tomato sauce or even salsa would work in place of spaghetti sauce. I like using crushed tortilla chips over the Panko and butter. Cilantro mixed in with the meat mixture would be good. Fresh is beat if you have it.
