It was the words 4 minute that caught my eye. Well, it bakes for 35 minutes but I happily forgive their bit of creative licence in the title because it is a very nice recipe, lol! My man thought it was a bit stodgy for him but, while I do agree that it is a little heavy, given the ingredients I was not expecting it to be light and fluffy. The children and I enjoyed it and it would make it again

I have another recipe for a corn side dish that we've been using for quite some time and I'm ready to change it up a bit. This one sounds easy and good so I think I'll give it a go. What's the best way to tell if this one is done?

I'm so happy to find this Jiffy recipe! I have one that is similar but takes a lot more ingredients and an hour to bake. I was hoping to find a smaller version of it to make on weeknights for my family. My inlaws always request my corn casserole around this time of year. It's very good with butter melted on top!
