    Baked Creamed Potatoes

    These creamy, cheesy baked potatoes are the perfect side dish. Serve this as part of a weeknight meal or impress your guests on Thanksgiving with a new take on potatoes.

    Ingredients

    • 2 pounds old potatoes
    • 1 cup mayonnaise
    • 1/2 cup sour cream
    • 1/4 cup milk
    • 2 eggs
    • 2 teaspoons mustard
    • Salt and pepper, to taste
    • 2 tablespoons parsley, chopped
    • 1/2 cup grated cheese
    • 1/4 cup Parmesan cheese, grated

    Instructions

    1. Peel and chop potatoes, cook in boiling salted water until tender, drain well. Mash until smooth, mix with mayonnaise, sour cream, milk, lightly beaten eggs, mustard and parsley; season with salt and pepper.
       
    2. Press mixture though a sieve, spoon mixture evenly into a greased casserole dish. Sprinkle with grated cheeses.
       
    3. Bake in a moderate oven 20 - 30 minutes or until golden on top.

    Why do the ads at the bottom of your recipes print out on the recipe? Sometimes it covers some of the recipe.

    You never give the servings for any of the recipes, which would be helpful to everyone, I am sure.

    @cma - Pressing the mixture through a sieve helps to ensure a consistently smooth texture for this dish. If you prefer a chunkier consistency, then you don't press the mixture through a sieve before baking. Hope this helps! - RecipeLion Editors

    Since the potatoes have already been mashed, why press the mixture through a sieve?

    OK, what are "old" potatoes? Already cooked ones or ones with "eyes" on them?

    I freeze my left over creamed potatoes, what a great idea to use them.
