I have never used mashed potatoes in a casserole before so was delighted when it turned out so delicious. Using evaporated milk was another first for me but it is a touch of sheer genius. The sour cream, bacon, garlic and cheese all combine to lift ordinary mashed potato into a whole new dish. Very good and we will very definitely be making this again soon.
