I've had roasted corn on any number of occasions, but this is the first time I've ever heard of fried corn. It looks positively delicious. The combo of corn and bacon is just irresistible to me, and this is a great side dish to make. I often have corn as a side, and this version is definitely worth trying. I know it calls for fresh corn, but I may try this out with the Del Monte Southwestern Corn first.

I love to cook corn in a skillet, it releases the sugars and caramelizes the corn to perfection! I always buy organic, non-GMO frozen corn and it tastes like it was just cut off the cob! I have some leftover ham in the fridge and this recipe will be great for using it. I know it calls for bacon, and I usually cannot find any reason to not use bacon, but since I have the leftover ham, I will use it this time. Tomorrow night is the night for this recipe! Thanks for sharing it.
