- 6 cups water

- 4 ounces udon noodles
- 4 ounces cubed firm tofu
- dash of soy sauce
- 4 chicken bouillon cubes
- 4 tablespoons miso
Instructions
- In a medium saucepan, bring water to a boil. Add onion, potatoes, carrot, mushrooms, tofu, udon, soy sauce, and bouillon to boiling water.
- Reduce to a simmer and simmer for 8-10 minutes or until veggies are tender. Stir in miso and serve.
