Creamy Tomato and Basil Soup

Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large onion, diced
- 2 (28-ounce) cans San Marzano plum tomatoes
- 1 cup chicken broth
- 2 tablespoons sugar
- 1/4 cup half and half
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon fresh oregano
- salt and pepper

Instructions

In a large pot, heat the olive oil over medium heat. Add the garlic and onions and sauté until the onions are soft, about 5 minutes.

Add the tomatoes, chicken broth, and sugar to the pot. Bring to a boil and reduce heat to low. Simmer for about 10 minutes.

Remove from the heat and add the seasonings and the half and half.

Using an immersion blender, puree the soup until there are no large pieces of tomato remaining.

Serve with a grilled cheese sandwich.

this looks so good and like an easy recipe! I made soup one time and used a blender since I didn't have an immersion blender, which I found also works well!

Back when I was a kid I remember dreading tomato soup days...something about that soup in a can that did absolutely nothing for me. It never occurred to me to make it homemade and this recipe really does sound so fresh from the garden dreamy. Maybe even use it as a sauce for pasta too and add spinach and Parmesan. Yum!
