I love discovering new and delicious ways to showcase my autumn harvest vegetables. This creamy, cheesy version is lovely, and you get a super yummy surprise inside the center of the "bowl". The cream really keeps the squash from getting dried out in the oven, and it looks so elegant. I would like to try this with spaghetti squash too!
