Taco Pie Casserole

If you think that a taco pie casserole sounds crazy, you're right. Just crazy enough to be delicious. You will seriously crave this ground beef casserole.
Made with pasta, ground beef, taco seasoning, plenty of gooey cheese, and a little bit of salsa, and some chopped green onions and Fritos corn chips for a crunch factor, this casserole hits it out of the park every time.
Kids and adults will crave this casserole no matter what the season. It's the truly universal answer to dinner that you've been waiting to find.

Ingredients
- 1 pound cavatappi pasta
- 1 pound ground beef
- 1 package taco seasoning
- 4 ounces cream cheese
- 1 1/2 cup salsa
- 1 1/2 cup Monterey Jack cheese, divided
- 1 cup cheddar cheese
- 2 1/2 cups corn chips, divided
- 2 green onions, chopped

Instructions

Heat oven to 350 F. Lightly spray a 9x13-inch baking dish.

Cook pasta according to package directions. Drain and set aside.

In a large skillet brown the ground beef until no longer pink. Drain the grease.

Add the packet of taco seasoning with the amount of water called for on the package. Cook for a few minutes.

Add the cream cheese, remove the skillet from the heat and stir the cream cheese until melted.

Add ½ cup of Monterey Jack cheese and mix. Add the salsa and mix in.

Combine the pasta and beef mixture.

Add 1 ½ cups of corn chips to the bottom of the baking dish.

Cover the corn chips with the beef/pasta mixture.

Top with remaining cheeses.

Bake for 20 minutes. Top with 1 cup of remaining corn chips and bake for an additional 10 minutes.

Top with chopped green onions.

Taco seasoning is about the only pre-made seasoning mix that I really love and so, for me (and my family), it's the hero of the dish. Altogether the flavors are really good - a beautiful blend with the cream cheese. We all loved this. It's filling and tasty and perfect for a family meal - YAY!!

Omg, yum...everything about tacos makes me a very happy girl and I was so surprised to see that there is pasta in this recipe! I would have never thought to incorporate pasta into a dish like this,l but I know it's going to be amazing, and I can't wait to make it...and more importantly, eat it! LOL I'd probably crush the corn chips on top and cover them with some cheese so they can melt into the casserole though.

You had me at cheese. It does seem like a lot of work to stand up all the pasta and push the meat down into the tubes. I think sticking it in the 9 x 13 baking dish works just fine. The cream cheese makes it creamy and helps the cheese blend in better.
