Hobo Potatoes
This hobo dinner is easy to make on the grill!
Hobo potatoes are the perfect grilling weather recipe. If you haven't heard of hobo dinners or hobo packets before, you are in for a treat!
All you need to do is wrap up a few delicious ingredients, including potatoes, bacon, and onions, with tin foil and grill until everything is roasted and delicious. It's one of our favorite ways to cook veggies on the grill, and we're sure that your family will love it as well! You just can't beat the rich, salty flavor of bacon and potatoes.
You can also have a fun time with the toppings for these hobo potatoes! Top your finished meal with sour cream, hot sauce, green onions, or olives. The possibilities are endless!

Ingredients
- cooking spray
- 3 bacon slices, cut up
- 4 cups potatoes, peeled and sliced
- 1/2 cup chopped green bell pepper
- 1/3 cup chopped onion
- 1 1/2 cup shredded cheddar cheese
- 1/8 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 1 teaspoon butter or margarine, optional
Hobo Potatoes Recipe
Instructions

Spray one side of an 18 inch piece of heavy foil with non-stick spray coating.

On sprayed surface, arrange half of the bacon to within about 2 inches of edge.

Top with half of the potatoes, half of the green pepper, half of the onion, and half of the cheese.

Top with remaining potatoes, green pepper, and onion. Sprinkle with seasoned salt and pepper.

Top with remaining cheese and bacon. Dot with butter, if you like.

Spray another 18 inch piece of foil on one side. Place it, sprayed side down, atop potato stack.

Seal all edges with a double fold.

Place the packet on the grill rack directly over medium to medium hot coals.

Grill for about 40 minutes or until potatoes are tender, turning the packet once.

I love this idea because it is so easy to switch out and use many times in the same week. i love roasting veggies, especially bell peppers. I can see how this dish would have a nice smoky flavor. Thanks for the post, I think I might try this out tonight. .

i've made this for years, with hamburger (veggie burger for me!) potato, carrot, onion, whatever kind of veggies you like really. you can do it in the oven, on the bbq or a campfire. we always called it Hobo Stew. :D

When I was a Girl Scout (and that was only about 44 years ago) we used this same concept when we were camping, except we would put a raw hamburger in the middle, with sliced potatoes, thinly sliced carrots, sliced onions, and then anything else we liked, like cheese, mustard, ketchup, seasoned salt, etc. Our troop leader came up with the idea herself and called it "". We put them on the campfire all at once (there was about 10 of us with 2 leaders) and then went swimming while dinner cooked! What a great time we had, do miss those people and times...

LOVE IT! !! I know someone who cooks this at BBQ's----She doesn't use bacon though(((wonder if that is put in raw????)))) Instead of putting the cheddar in she adds white Velveeta chunks after pulling off the grill and closes the foil back for a few min.

I think with this recipe you add what you want and subtract what you don't want and before you know it, you have a recipe that is your own invention. And it's just the way you like it.

This recipe sounds great & I bet you could do it in the oven too. Never heard of Putting on the grill-but why not, as long as it works! : D

I would do this with the mild long green chili's like the Anaheim for a Southwestern touch and maybe sausage. I make this a lot in a skillet and my son loves it.

We do this same thing, only with adding ham and sausage to the recipe and then scrambling eggs with it.... its great if you're having a few over for breakfast... and a real meal pleaser...

for joycetheboss. try doing it same as recipe calls except put in pre-heated 350 oven for appox. 30 minutes. check it, because times could fluctuate.

We've been making this recipe for years when we go to the lake and I usually don't peel the potatoes. It's easier, adds a little bit of fiber, and for anyone not liking the peelings, it's easy enough to just pick them out.

I think they are referring to the taste of potato skin appetizers...if you like their taste then you will like this dish.

This recipe sounds delicious! It says, if you like potato skins...but the recipe says to peel the potatoes. I'm I missing something here?

Think with this recipe you can do what you like with the potatoes. If you don't like peel then peel. I think the peel adds more flavor and more of a rustic touch to the whole thing. :)
