Easiest Layered Cabbage Casserole
Shredded cabbage and rice make the prep for this cabbage casserole almost too easy!
Even those who don't care for cabbage will love this beefy unstuffed cabbage casserole recipe. Easiest Layered Cabbage Casserole has all the flavors of stuffed cabbage rolls, but it's made the lazy way. With only five basic ingredients plus cheese, it's as easy as mix, layer, and bake. There's no stuffing or rolling required in this recipe, and the best part is, it's a great frugal recipe! Plus, this can also be made ahead for nights when there's no time to fuss over dinner. Weeknight meals don't get much easier, or cheaper.

Ingredients
- 1 pound ground beef
- 1 cup chopped onion
- 1 (10-3/4-ounce) can condensed tomato soup
- 1 1/2 cup water
- 3/4 cup raw brown or white rice
- 4 cups cabbage, shredded
- Salt and pepper, to taste
- 2 cups shredded cheese (optional)

Preheat oven to 350 degrees F.

Brown beef in a skillet and drain fat. Add onion and saute until translucent. Add soup, water, and rice, cover and let simmer for 10 minutes.

Spread cabbage in bottom of a 9x13-inch casserole dish. Layer beef mixture on top spread evenly but don't stir.

Cover and bake for 1 hour and 20 minutes, or until rice is cooked. If desired, sprinkle cheese on top and bake for another 10 minutes.

This sounds like it would be a wonderful comfort food and I love that it's so much healthier than your traditional lasagna. I don't think I've ever had cheese on cabbage before and can't seem to imagine what that would be like so I'd probably leave it out and instead add some chunky tomatoes and peppers in between the layers. Yum!

This is such a great way of feeding the hungry hourdes on a week night after a long work day. The cabbage was still crunchy and delicious and all the flavors had combined to form a really tasty meal. Next time I will perhaps add a little chopped fresh garlic and chili and see what that does to the overall flavor. This is a really economical dish too so perfect for the whole family.

I made this last week. I have tried the soupy version of unstuffed cabbage rolls, so I decided to try the casserole version. It is so good! I love cabbage rolls, but I hate separating the cabbage and stuffing it. This takes all of the work out of it, while leaving the delicious taste. I loved the soup version, but I adore this casserole version! So easy, plus delicious, plus quick cleanup, equals the perfect recipe for me!

This sounds almost like making stuffed cabbage only you don't have to stand there and stuff the cabbage. I like this idea, since it will take less time than stuffing the cabbage. Using the same ingredients only probably takes less time than stuffed cabbage. This would go good with fresh potato salad. This is definitely a good meal for a cold day.

What kind of soup since it does not specify in the recipe? This soulds like a really great casserole. And as Wilemail says, it has to have corn bread with it!!!

jabot, I make a dish just like what you described. I start out frying a few bacon strips, drain and crumble. In bacon grease saut one med. grated cabbage, sliced or small chunks of smoked Polish sausage & crumbled bacon over low- to med heat. Season with black pepper. I also add some red pepper flakes. Add cooked and drained wide egg noodles. Mix well to get cabbage distributed. This is done on the stove in a large frying pan or Dutch oven. Excellent cheap meal, gets better as a left over. Reheat in microwave.

This is not a comment but a question. Years ago at a friends house for dinner his mother cooked a meal of Egg Noodles, shredded cabbage, polish sausage. There was also Fennel seeds in it, I am sure there was other things like butter, and spices, but I do not have the recipe and sadly that dear lady is passed away now. Can you possible help me to figure out what might have been in this recipe, it was so good. I know she baked it in the oven before serving it, as she brought it right out of the oven to the table. I hope you have some suggestions as to how I could recreate this recipe. Thank you Joan Abbott

Jabbot, the Fennel seeds were most likely from the Kielbasi. (sausage). Ingredients were probably onion, chopped or shredded cabbage, butter, salt and pepper. all sauteed together. Cover and cook until cabbage is soft. Lot's of butter, that is the magic. At least a stick. (real butter, not margarine). That's it. While doing that, cook your noodles, when noodles are done toss all ingredients together... mmmm good. I make it all the time.
